National publications such as Gourmet, Bon Appetit, Food & Wine and Southern Living have praised his ability to bring world-class flare to southern dishes. Most recently, Fleer was a finalist for the 2011 James Beard Foundation Best Chef - Southeast. Ryan Smith, Empire State South, Atlanta, GA : Before being named Executive Chef of Empire State South in 2010 by Chef/Partner Hugh Acheson, Smith worked in some of Atlanta’s most prominent restaurants, including Bacchanalia, Canoe and Restaurant Eugene. Smith was recently nominated Food & Wine's The People's Best New Chef 2011: Southeast. Tandra Watkins, Ashley’s Restaurant at the Capital Hotel, Little Rock, AR : After travelling and studying in France and Portugal, Watkins joined the Capital Hotel as Pastry Chef just prior to its re-opening. She marries traditional French techniques with the traditional folkways of the South. Her croissants are to die for! Taylor Ricketts, Delta Bistro, Greenwood, MS : Since 2008, Ricketts has been chef/proprietor of Delta Bistro where she weaves traditional Southern fare with global flavors for locals, visitors and culinary celebrities like Ruth Reichl, Emeril Lagasse and Thomas Keller. She sources local ingredients and involves her staff, patrons and family in crafting an imaginative menu that reflects her food philosophy. Her zeal has won her invitations to culinary events and she was a semi-finalist nominee for a 2011 James Beard Award for "Best Chef – South.”
